What I'm eating

  • Friday lunch: rye bread sandwich with inches of baby spinach, mushrooms, cheese, artichoke hearts
  • Thursday afternoon: eating an apple and some seed filled crackers
  • Thursday lunch: the final leftover soy bombs, with a big pile of rocket leaves & some tahini dressing.
  • Tues lunch with my parents. Pide bread sandwich with avocado, pesto, greens & fetta. Positively delicious. And a coffee.
  • Tuesday breakfast: kamut toast (from Sonoma) with tahini and mum's home-made plum jam

About Limes & Lycopene

Hello and welcome to Limes & Lycopene. I’m Kathryn Elliott and I’m a Nutritionist and Herbalist.

I live in the inner west of Sydney, Australia, with my partner, Richard and our amazingly cute, but slightly dumb cat Trilby. I see clients privately at a clinic in Gladesville. Plus I write and teach about all things food and health related.

About Limes & Lycopene

Limes & Lycopene is all about food, health and how to eat well.

While there’s a glut of information about what you should be eating to be healthy, lose weight and have plenty of energy. It’s the practicalities of how you actually do this that most people struggle with. If you’re busy, work long hours and are not an experienced cook how do you buy, prepare and eat the best food for you?

If your response to most healthy eating advice is “just tell me what to eat” then Limes & Lycopene is for you. On this site I aim to cut through all the guff and misinformation about healthy eating. Instead I focus on practical solutions and making your diet better than it is.

This site is not for hard-core nutrition nuts, instead it’s for everyday people who are struggling to eat well. I’m not a dietary zealot and I think the perfect diet is a myth. Personally I enjoy a bit of chocolate and a glass of wine, but I prefer to make these occasional foods rather than everyday choices.

While I might occasionally write about a nutrition concept or current health topic, I mostly concentrate on actual food – how to buy it, cook it and eat it. I have a particular focus on vegetables, because most people don’t eat anywhere near enough.

About Kathryn

Ever since I can remember food and health have been central to my life. Snippets I remember from childhood include: a summer of sharing first nectarines with dad; mum making a rabbit cake for my ninth birthday; Turkish delight at Christmas; making creme caramel from a packet with mum; swapping sandwiches with friends. Big decisions have been made around these themes, from realising as a teenager how food affected my health, becoming a vegetarian, through to the decision to become a Nutritionist.

And food and health dominate my relationships with my family, partner and friends: laughing with mum about our mutual habit of changing recipes in fundamental and bizarre ways (Hungarian Mushroom Pie anyone?); marking occasions with my family around a meal; fussing over friends’ diets; cooking and catching up with Richard at home.

Then I became a Nutritionist, and food, diet and health are now the foundations of my professional, as well as personal life.
