What I'm eating

  • Saturday. Iku lunch today: tofu burger w/ steamed veg, pickled red cabbage & beetroot, & chickpea w/ beetroot. Plus they're amazing dressing
  • Thurs late lunch: Pad Thai with tofu and double the vegetables.
  • Hungry all morning & knew lunch was going to be late. Had half a tin of white beans, a banana, a peach & square of Beetrotinger cake.
  • Thurs breakfast: rye and pumpkin seed toast again. One w/ white bean paste / dip & t'other w/ marmalade. Plus some pineapple.
  • Made kind of polenta pie for Tues dinner. Polenta top & bottom, w/ filling of lentils & silverbeet cooked in tomato.Topped w/ cheese & baked

Happy new year & how are those new year resolutions going?

Happy new year.

Do you make new year resolutions? If any of yours centre around healthy eating, then I’d strongly advise reading Sophie’s simple plan to make healthy eating easier this year. It’s an easy and yet powerful principle to follow, which will lead to you eating better food this year.

In the spirit of Sophie’s post I thought I’d put up a photo of the fruit and vegetables I ate on one day last week.

In other news, I’ve been taking part in Janathon this year – trying to run and blog about it every day. Because running isn’t the focus of Limes & Lycopene, I’ve been doing this on a separate site which you’ll find here.

I have some posts planned for the next few weeks. I’ve been making healthier versions of some classics, including a potato salad and some creamy egg sandwiches.

And finally, to any readers who live or have friends in Queensland, my thoughts go out to you. Stay safe. The floods have been awful and pictures from the air show Brisbane full of water. If anyone would like to help those affected then please consider donating to the Premier’s Flood Relief Appeal.

Happy New Year, Kathryn!

Janathon sounds like fun and you’re doing so well! I’m quite envious. Struggling to run much just now as it’s dark before and after work. We live outside the city so there’s only I can go before the streetlights run out! Plus there’s still ice around everywhere. Bah.

Hi there Wendy and happy new year. It’s interesting looking at the other people doing Janathon as most are in the northern hemisphere. There’s a lot of running on treadmills at the gym going on. No ice here, but it is hot and humid. I’m either having to run early morning, or about 7pm, just to keep the heat at bay.

Good idea Helen. I always set myself some goals for the year, but don’t do it until the end of January. Partly because I like to let the ideas mull over in my head, but also because January is such a weird month with holidays, extreme weather, etc. It’s much harder to make changes when you’re out of routine. Good luck with the healthy eating plan though.

Hi there Stephanie, the beans are lima beans, also called butter beans. I love them and eat them quite a lot!

My New Years Resolution is to jog 5km (As I type, I can only jog about 1km without stopping – I’ve always been a dancer, not a long distance runner hehe). I’m looking forward to reading your Janathon blog and getting inspired!

Frou Frou, that’s a great goal. At the beginning of last year my goal was to be able to run 2km by the end of the year and I blitzed that. Just build up your distance slowly, over some time and you’ll definitely get there. Good luck.

Catherine – excellent to hear. Sounds like 2011 is going to be a good year for you.

I’ve tried real hard to stick to my “exercise and eat well” new years resolution….it’s coming along only ok, but will ramp up with a bit more once this weather spices up
