What I'm eating

  • Friday lunch: rye bread sandwich with inches of baby spinach, mushrooms, cheese, artichoke hearts
  • Thursday afternoon: eating an apple and some seed filled crackers
  • Thursday lunch: the final leftover soy bombs, with a big pile of rocket leaves & some tahini dressing.
  • Tues lunch with my parents. Pide bread sandwich with avocado, pesto, greens & fetta. Positively delicious. And a coffee.
  • Tuesday breakfast: kamut toast (from Sonoma) with tahini and mum's home-made plum jam

Spaces available - Cooking for One

A quick post to let you know there are still spaces available in my Cooking for One or Two session next Saturday.

About the seminar

If there’s just one or two of you at home, it can feel hard to get motivated to cook a proper meal in the evening. Instead many people fall back on take-away or toast. However no matter the size of your family, eating good food is fundamental to your health and wellbeing. And it’s possible to make it easier.

In this seminar I’ll be looking at tips and strategies for making it easier to eat well. Bring along a friend and join me at Balance2health for a glass of wine and some nibblies, while I run through easy and practical solutions. We’ll talk about how to make smaller meals; use leftovers creatively; get motivated for cooking in the evening; and find healthy foods which can be cooked quickly.

Would love to come but the C$1,198 plane ticket price is a killer ;-). (And apparently, that’s a “special offer”!)

Seriously, this is an excellent idea for and educational/social session and I’d love to be able to attend.

I was thinking exactly the same thing even before I read Elaine’s comment. I’ve been thinking about this because my mother has recently been hospitalized and I’m worried that now she is home she will start to feel that toast and a cup of tea is enough. Ah well, so far I’ve been filling her refrigerator and freezer with my own cooking, but I’m cooking separate meals for her because my husband and I just don’t eat the way our parents did.

Oh come on Elaine, you’d also get a holiday in the bargain deal as well . . .

But just to let you know – I am looking at ways of offering these sessions online. In some format. Not sure what that will be and it won’t be happening straight away. It’s all outside my area of expertise and technological knowledge. But hopefully I’ll get something going in the new year.

And Kelly – you’re absolutely right that your mum needs more than tea and toast. Even if she made a poached egg or baked beans on toast, that would be better. I actually think omelettes and frittatas are brilliant meals for one person. You only need to use one frying pan (so it limits the washing up), they’re flexible (so you can use up odds and ends in the fridge/freezer) and they cook quickly. Try to get your mum onto them?

Since the kids left home, I cook a litre or more of soups, stews, pulses etc, even brown rice and freeze in single serves in a muffin tray. When frozen, I move into bags – ever so convenient and single serves prevent over-eating too. I enjoy your blog – very sensible and practical.

Thanks for leaving a comment Alison. Sounds like you have some good ideas there. Making full use of your freezer is such a good strategy when cooking for smaller numbers of people.
