What I'm eating

  • Saturday. Iku lunch today: tofu burger w/ steamed veg, pickled red cabbage & beetroot, & chickpea w/ beetroot. Plus they're amazing dressing
  • Thurs late lunch: Pad Thai with tofu and double the vegetables.
  • Hungry all morning & knew lunch was going to be late. Had half a tin of white beans, a banana, a peach & square of Beetrotinger cake.
  • Thurs breakfast: rye and pumpkin seed toast again. One w/ white bean paste / dip & t'other w/ marmalade. Plus some pineapple.
  • Made kind of polenta pie for Tues dinner. Polenta top & bottom, w/ filling of lentils & silverbeet cooked in tomato.Topped w/ cheese & baked

  • Two salads to choose from: Originally I planned a link to Stonesoup’s wondrous take on tabbouleh. But then Jules posts a sublime cabbage salad. So I’ll include that as well.
  • Carrot recipes: I’m not the biggest fan of carrots. But I know they’re good for me, so I’m always looking for new ways to make them more interesting. Which means I like the look of Mediterranean Cooking in Alaska’s carrot and caper dish.
  • Where food comes from: Fascinating article about how we’ve lost our knowledge of where food comes from. It’s long, but worth the read. A call to arms.
  • Eating well at work: Some good tips from the Chew on This blog about how to eat well at work. Are you a proactive or a reactive eater?
  • Black bean & sweet potato burrito: As soon as I saw Wendy’s burritos I just had to make them. And they are delicious.
  • Quickie soup: A lovely soup from Cucina nicolina white beans, tomato, spinach and lots of basil. Plus it only takes 20 minutes to cook.

It’s always interesting to see what others like and find interesting (as with your Quicklinks). But it’s also as interesting to see what it is you don’t like. And carrots? I would have never guessed! Maybe it’s because I like them so much (especially raw!) that I can’t imagine others not enjoying them as much. :) Anyway, the carrot and caper recipe certainly looks delicious and I would like to try that myself. :)

Yum! I just finished a very generous bowl of the white bean and tomato soup – it was lovely! Just the nourishing start to the week that my body was craving. P.S. My beans were intact and it still worked a treat.

Hey there Renee – glad you enjoyed the soup and the beans behaved. After talking to you, I’ve bought ingredients to make the burritos again in the next few days as well. This time with white beans. Haven’t made the soup yet. Hmm, wonder if I have all the ingredients for lunch today?

I made the burrito’s for dinner last night (with kidney beans instead of black beans and 2 small red chilli’s instead of green) and they were a hit! I made a salsa to go with it – tomato, cucumber, chopped spinach (left over from soup), corriander, corn, olive oil, red onion and lemon juice… Even K enjoyed it – I just didn’t tell him it was sweet potato until after he’d finished his second helping!

Beautiful meal Renee. Richard doesn’t like sweet potato either, but he does like the burritos – so it’s a good way of masking the flavour. And I have bean and tomato soup on the stovetop – cooking away for lunch.
