Two questions

Can anyone tell me what a pot sticker is?

I read about them all over the place. Obviously they’re a common thing. But I’ve never heard of them. And each article I read seems to feature a different food.

Does anyone know where to buy farro in Sydney?

I’m obsessed with Helen’s best salad ever. The recipe looks glorious. I want to try it. But am having no luck buying farro.

Do we call it something else here in Australia? Am I looking in the wrong places?

Any help, thoughts and explanations would be VERY welcome.

Pot Stickers – little steamed chinese dumplings.
Farro – no idea where to find. Also known as emmer wheat. sometimes (incorrectly) translated to english as Spelt.

A pot sticker is a dumpling cooked in a pan. The bottom browns (sticks) while the top steams.

The Essential Ingredient sells Farro down here – maybe give Camperdown a ring? Or have they moved?...

Wheat Berries as the Americans call them would be a good substitute, and semi-pearled barley is good, too!

As a Chinese person, I agree with Ed. Pot stickers are the pan-fried dumplings, not the steamed ones.

In Dutch a pot sticker could be an adhesive label you put on a jar.

I thought the pot stickers were the little fried ones too. Not necessarily deep fried until crunchy, but definitely normally fried…

Re the Farro, there is a whole controversy about wether or not spelt and farro are the same thing. If they aren’t the same then they’re definitely similar enough, and you might have a bit more luck finding spelt

apologies for my comments on potstickers – I’ve re-read it and realise i was unclear. The non-contact parts of the dumpling cook by steaming as a result of the heat let off by the pan. The contact side is crisp, the rest isn’t…

What lovely people you all are. Pot stickers – such a cute name. Thanks for clearing that up.

Grocer and Sophie – I’d wondered whether it was the same as spelt. So thanks for clarifying.

Lucy – I always forget about Essential Ingredient and John C thanks for the info that it’s now in Crows Nest. Purely coincidentally I shall be there on Saturday, so I can pick some up.

Joost – if I didn’t know it was a food I would have thought the same thing.

I’ve also spotted a recipe in Jamie’s Italian book, which uses farro – giving me two reasons to try it.

And thanks everyone for the alternative suggestions. I have never cooked with semi-pearled barley, so another food to try!

I thought potstickers are the same as gyozas (neither are terms I hear a lot) – I tried lucy’s mushroom and kaffir lime recipe which was fantastic – I’ve also see some good ones on LisaRene’s blog http://www.uniquelittlebits.com/ULB/Categories.html

Am late on this one too – my understanding is pot stickers are gyoza. The mushroom ones on my blog are made by first frying the dumpling, then adding a little water to the pan to finish off the process (with the lid on for these last few minutes of cooking.)

Farro is just the Italian name for wheat berries, as far as I know. In Melbourne they are widely available in Italian grocery stores which might be cheaper than the gourmet places. Leichardt or similar areas probably has the kinds of stores that sell it. In Melbourne I’ve bought it from Maria’s in Nicholson St, Nth Fitzroy.

I’ve bummed out on farro in Crows Nest. Neither Essential Ingredient or Macro have it. Trip re-confirmed my hatred of the Macro in Crows Nest. Essential Ingredient staff said “that’s one of our most frequent request”. Well WHY DON’T YOU STOCK IT THEN?

Could have bought both spelt and wheat berries – but now I’m determined. Must get farro. Nothing in Leichhardt. So Five Dock is next.
