What I'm eating

  • Saturday. Iku lunch today: tofu burger w/ steamed veg, pickled red cabbage & beetroot, & chickpea w/ beetroot. Plus they're amazing dressing
  • Thurs late lunch: Pad Thai with tofu and double the vegetables.
  • Hungry all morning & knew lunch was going to be late. Had half a tin of white beans, a banana, a peach & square of Beetrotinger cake.
  • Thurs breakfast: rye and pumpkin seed toast again. One w/ white bean paste / dip & t'other w/ marmalade. Plus some pineapple.
  • Made kind of polenta pie for Tues dinner. Polenta top & bottom, w/ filling of lentils & silverbeet cooked in tomato.Topped w/ cheese & baked

The Moroccan spice blend that saved me

A number of people have asked for the Moroccan spice blend recipe. The mixture I mentioned as one of the five foods that save me when I’m super-busy.

It’s quick and easy to make – no toasting and grinding required. The amounts below make about 1/4 cup of spice mix.

Moroccan spice blend

  • 2 teaspoons each of ground cumin, ground coriander, paprika, ginger and cinnamon
  • 1 teaspoon each of ground white pepper and turmeric
  • 1/4 teaspoon each of chilli powder and ground nutmeg

Combine all spices and store in a sealed jar. Because spices lose their pungency with age, blend in small batches.

I just had a brainwave. I’m going to mix this together for my brother (excellent cook with a fussy palate) and send it to him for Christmas. I"ll be making up his parcel later this week and was a bit stumped at what to include. Thanks and thanks, Kathryn.

No worries Elaine – it really is a fantastic mix and I use it all the time. Originally it was given to me by my mum, as a Christmas present. Along with some of this mixed spice blend. While the latter is my recipe, it was still lovely to get a batch pre-made. The two made an excellent present.

And the Moroccan mix is one I’ve used over and over and over.

We just used this mixture in our rissoles – they tasted excellent – moroccan spiced rissoles, greek salad and turkish bread – a feast of nations! :-)

Thank you!! I refuse to buy spice mixes in the jar because they are expensive, have to be used in a week and never taste as good as home made ones. Now I can finally make spicy Moroccan food. Hooray!
