What I'm eating

  • Friday lunch: rye bread sandwich with inches of baby spinach, mushrooms, cheese, artichoke hearts
  • Thursday afternoon: eating an apple and some seed filled crackers
  • Thursday lunch: the final leftover soy bombs, with a big pile of rocket leaves & some tahini dressing.
  • Tues lunch with my parents. Pide bread sandwich with avocado, pesto, greens & fetta. Positively delicious. And a coffee.
  • Tuesday breakfast: kamut toast (from Sonoma) with tahini and mum's home-made plum jam

The foods that save me: baked beans

I know this is a popular answer, but the last of the foods that saved me when I was super-busy are baked beans.

They come in a can, they take minutes to heat up and provide dense, good quality nutrition. Baked beans are from the legume family and are high in fibre, protein, antioxidants, vitamins and minerals.

So while they’re quick and easy, baked beans are nutritionally top-notch. All of which makes them an excellent dietary back-up.

I have two favourite ways of eating them:

  • poured over wholegrain sourdough toast, or
  • served with a poached egg, grilled tomatoes, mushrooms and some home-made potato wedges.

It’s easy meal preparation. No thinking required. Exactly what you need when busy and you’re brain’s a bit fried.

This is the last in my series of the five foods which saved me when I’m super-busy. Thanks for all your comments, it’s been great to find out what you do when time-poor.

So glad you picked this! This is one of my very favorite winter lunches—beans and a sourdough spelt bagel. I have, in the past, made my own, but I must admit I like the canned ones better!

I love baked beans too and I think one of the great things for me about them is the comfort factor they bring as we often used to have them as a child – because when you are busy you are often stressed and need comfort as well as nutrients!

Ricki – I do occasionally think about making my own. But to me, baked beans are a convenience food. They’re the thing I eat when I don’t want to cook. So easy to open a tin and have an instant meal.

Johanna – agreed. My family are all long-term baked bean eaters and they were a regular food when I was young.

Cookinpanda – glad to hear you’ve enjoyed the series. You’ve reminded me that I need to get that spice mix off my mum.

Milly – baked bean omelette! Wow, that’s something I’ve never even thought of trying. Very good comfort and convenience food.

I love bagels but I am unable to eat wheat so have been in search of spelt bagels but with not much luck. I noticed Ricki mentioned them above and was wondering if you could tell me where you get them from. I live in Sydney so hopefully there is somewhere locally or online.
