Three avocado recipes for busy people

The latest issue of Life etc magazine is out, complete with my Ten Minute Kitchen recipes. These simple, no-fuss recipes are designed to take minutes. They also provide a well balanced meal and at least two of your daily vegetables serves.
The theme ingredient this issue is avocado and the recipes are:
- herb fishcakes with avocado salsa
- warm lima bean and avocado salad with ginger
- chilli chicken skewers with chickpea and avocado salad.

Another avocado recipe tip – for lunch yesterday I had the avocado and grated carrot salad recipe from the chocolate and zucchini web site (I make this quite often as it is very easy)

Glad you liked it! I must admit I don’t tend to bother adding any chicken but I do occasionally make a poached egg to go on the top if I have a bit more time
It definitely needs some protein – I like the cubes of tofu idea on C & Z. But I also like your poached egg plan! Poached eggs are such an easy way to bump up the protein value of what you’re eating. I put them on top of soups, salads, stews – wherever a little extra protein is needed.
