31 Days: eat a variety of vegies

Today’s task in 31 Days to Better Energy is to eat at least three different vegetables with your dinner.
Why?
Any of you who are regular readers of this blog know I’m a big fan of vegetables. While I definitely love cooking and eating them, it’s also because they’re immensely good for you. Vegetables are full of vitamins, antioxidants and minerals, all of which are important for the efficient running of your body. To feel your best, you need to include vegetables in your diet every day.
Today’s Task
It’s day 12 in Limes & Lycopene’s month of energy-giving tips and today’s task is to include at least three different vegetables with your dinner tonight. Pick three regulars, or why not try out a couple of new ones? Have some legumes with your dinner, or try a vegie-dense risotto. Make some fritters and serve them with a salad, or put everything together in one big salad.
