I have a tree full of limes and wondered what are some of the ways I can use them . Thank you.

A tree full of limes Karen, I’m very envious. You could squeeze them into jugs / bottles of water, maybe add some mint, to spark up your daily water intake. I like adding a bit of lemon or lime juice to some soups, as it adds a depth and complexity of flavour, for example this lentil and barley soup. Lime also goes beautifully with Thai and Vietnamese style dishes – in the next couple of days I’m going to post a rice paper roll recipe, which uses lime juice.

You can wrap fish up in baking paper with snowpeas, julienned carrots, slices of lime and herbs, then bake in the oven for about 8 minutes. Or add lime halves to a baking tray with fish and quick cooking vegies like snowpeas, cherry tomato halves, sliced green beans. Drizzle over some olive oil, cover and bake in the oven.

Lime zest can be added to muffins, cakes, fruit salad.

You can use limes to make beautiful, sparky and fresh tasting dressings – mix with a smidgeon of soy sauce, some olive or sesame oil and fresh mint or coriander. Or squeeze some over a stir-fry just before serving.

Limes are a fantastic source of vitamin C, so good luck with making use of them.
