Great summer recipes from Bill Granger in yesterday’s Good Living. I particularly like the vietnamese style salad, which could be turned into a light meal by adding some cooked tofu, chicken or fish. The pork burgers are quick and easy, plus the watermelon granita is a summer dessert that’s lower in kilojoules than ice-cream.

The watermelon granita would only be lower in calories than ice-cream until I got some alcohol in it! Jokes aside, it sure sounds refreshing.

Ah yes, well there is the whole tradition of mixing vodka with watermelon . . . even with a shot of vodka in, it would still be lower than ice-cream and definitely lower in fat. Not that I’m condoning putting vodka in, you understand!
