Hello and welcome to Limes and Lycopene. I’m Kathryn Elliott, a Nutritionist and freelance cookery writer and recipe developer.

I live in the inner west of Sydney, Australia with my partner, our beautiful cat and two chickens, who lay fabulous eggs.

Over the last two years my life has changed considerably, as I live with vestibular migraines, a type of migraine which causes dizziness instead of headaches.

I write a lot about vegetables and have a mild obsession with beetroot.

My favourite cookery book of all time is a (now) food splattered old paperback edition, by Madhur Jaffrey. It contains no photos, no styling and no glamour. Instead, it’s full of amazing and astounding food.

Limes & Lycopene

Limes and Lycopene is all about food, health and how to eat well, particularly when time and energy are in short supply.

While there’s a glut of information telling you what to eat, to be healthy, lose weight and have plenty of energy. It’s the practicalities of how you actually do this which is hard, especially if you're busy, struggle with energy and are not an experienced cook.

If your response to most healthy eating advice is “just tell me what to eat” then Limes and Lycopene is for you. This site is not for hard-core nutrition nuts, instead it’s for everyday people who are struggling to eat well. I’m not a dietary zealot and I think the perfect diet is a myth. Personally I enjoy a bit of cake, a glass of wine and love pizza, although I try to make these occasional rather than everyday choices.
